Mushroom Salad & Dressing
INGREDIENTS 100 g button mushrooms 30 ml Gwydir Grove Zesty Lemon Agrumato Zest of 2 lemons, juice of 1 1 small bunch of finely chopped parsley 10 anchovy fillets |
METHOD Put chopped parsley in a bowl, add lemon zest and juice. Mince anchovy fillets and add. Stir with a fork to combine and pour in the Zesty Lemon oil. Thinly slice the mushrooms and put in separate bowl. Combine dressing ingredients thoroughly and pour over the mushrooms. Delicious with seared salmon, with other meats or on its own as a side salad. Dressing is good on vegetables and other salad greens. |
