Grilled Crusted Pumpkin, Feta, Rocket & Caramelised Onion Salad

INGREDIENTS
1 packet Screaming Seeds Outback blend (www.screamingseeds.com.au)
600g pumpkin sliced thinly
120 g feta
100g rocket
4 tablespoons caramelised onions
50ml Verjuice
Tablespoon Gwydir Grove Family Oil
Extra Gwydir Grove family oil

METHOD
Coat the pumpkin in Olive oil and press into the seasoning

BBQ the pumpkin slices over a moderate heat for 2-3 minutes on each side. Set aside.

In another bowl combine the rocket and onions, Whisk the verjuice and Olive oil.

Layer a platter with the rocket and onion mixture, crumble over the feta and top with the crusted pumpkin.

Pour the dressing over the salad and serve.
