Bistecca alla Florentina with Gremolata & Grilled Marrow Bone - Recipe by Ed Halmagyi

4 x 350g T-Bone steaks
salt and pepper
2 tablespoon Gwydir Grove lime agrumato olive oil
1 bunch flat leaf parsley, chopped finely
2 tablespoon capers, chopped
zest 2 lemons
2 cloves garlic, chopped finely
4 x 5cm pieces marrow bone
1 tsp smoked paprika

METHOD
Season the steaks with salt and pepper then drizzle with lime agrumato infused olive oil. Barbecue until medium-rare.

Combine the parsley, capers, lemon zest and garlic, and season lightly with salt.

Grill the marrow bones for 2 minutes each side, then sprinkle with smoked paprika. Serve each steak topped with gremolata next to a piece of marrow bone.

Serves 4
