Potato Puree - with Australian Native Mint & Garlic Fusion

INGEDIENTS
600g desiree potatoes
500g butter
100ml cream
80 ml Gwydir Grove Australian Native Mint and Garlic fusion
Salt and pepper
METHOD
Peel and cut the potatoes into even pieces and simmer in water until just soft. Drain off water. Gently heat butter, cream and oil until the butter melts. Mash the potatoes, add the oil mixture, and whip through. Season to taste.
